Dry fish (Shutki in Bengali) is an important source of protein in Bangladesh. Protein content of dried fish is 16.6-22.8g per 100 g.Normally sun-drying is very popular in Bangladesh for processing the harvested fish. But there are some problems associated with the sun-drying of fish is infestation of the products by the blow fly and beetle larvae (Saha, 1999). Other problems marketed evident with dried fish are the contamination during different stages of handing and processing and indiscriminate use of various types of pesticides (Connell, 1957). During drying, insecticides are used in raw fishes. Insecticides have both immediate and long-term effects on human health (Khan, 1992).
